- 1 lb chicken thighs, boneless and skinless
- 1 ripe mango, diced
- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 limes
- 8 small flour or corn tortillas
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste

- Make the mango salsa
Combine the diced mango, red onion, jalapeño, and cilantro in a bowl. Squeeze in the juice of one lime, season with a pinch of salt, and toss. Set aside — the flavors get better as they sit.
- Cook the chicken
Season the chicken thighs with cumin, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken 5-6 minutes per side until cooked through and slightly charred. Let rest for a few minutes, then slice into strips.
